Thailand’s coast is scattered with small fishing villages, especially near Phuket. These villages often sport fish markets – a popular one for sailors being Koh Panyee. Treat yourself to some locally-caught fish for dinner during your charter.
This local fish clearly deserves a local treatment. A classic Thai coconut curry will do swimmingly! White fish goes best with this flavorful concoction, but go with your gut at the fish market.
Perhaps the best part of this dinner is how easy it is, especially considering you’ll be in a small galley kitchen. Simply combine all the ingredients into one pan, and bake it in the oven.

The big players in this dish are your local fresh-caught fish, coconut milk, curry powder, chili flakes, pepper and carrot, scallions, basil, garlic, and lime. That’s all!
Stir the sauce together first – that’s the curry powder, chili flakes, coconut milk, and a dash of oil. Next, put your chopped garlic, scallions, and basil into the dish.
Some recipes suggest leaving the basil out and sprinkling it on at the end. Save some of it for a garnish, but throw some in with the other spices to develop deeper flavor in the oven.
Mix your veggies in with the sauce and spices, salt to taste, then layer the filleted fish on top. Salt the fish, then cover your dish and put it in the oven. When the fish is cooked through, your delicious dinner is ready.
